Casein is a milk protein that occurs naturally in many foods, and can also be used as a binding agent. It appears in two main types: edible and technical. People who have a casein allergy may experience negative reactions both to both types of casein.

Edible casein is used in both medicine and food. It can be hidden in lunch meat, hot dogs, and non-dairy creamers and toppings. It may be used in vitamins and vaccines.

Technical casein is used in many products, including cosmetics, paint and adhesives.

Casein has been linked to negative effects in people on the Autism. It has been documented to break down into protein fragments called casomorphins, which may have an effect on the body similar to that of morphine or other opiates.
