firm tofu, sliced

sake, or white wine
1 1/2 tbs
soy sauce
1 tsp
fresh ginger, grated
1 tbs
sugar
1 tbs
water
1 tsp
cornstarch
Heat a wok, coat with oil and sprinkle on salt.
Add onion, then mushrooms, stir frying each over high heat 30 seconds.
Reduce heat to medium-low.
Add carrot, green pepper and tofu, stir frying each 1 minute.
Reduce heat to low.
Add sake, soy sauce, ginger, and sugar.
Simmer 3 to 4 minutes.
Dissolve cornstarch in water and add to wok.
Simmer 30 seconds or until thickened.
