Stir-Fried Tofu

vegetable oil
1/2 tsp
salt
1/2 cup
onion, sliced, thinly

mushrooms
1
carrot, julienned
2
green bell peppers, sliced
12 ozs
firm tofu, sliced
1 tbs
sake, or white wine
1 1/2 tbs
soy sauce
1 tsp
fresh ginger, grated
1 tbs
sugar
1 tbs
water
1 tsp
cornstarch


  • Heat a wok, coat with oil and sprinkle on salt.
  • Add onion, then mushrooms, stir frying each over high heat 30 seconds.
  • Reduce heat to medium-low.
  • Add carrot, green pepper and tofu, stir frying each 1 minute.
  • Reduce heat to low.
  • Add sake, soy sauce, ginger, and sugar.
  • Simmer 3 to 4 minutes.
  • Dissolve cornstarch in water and add to wok.
  • Simmer 30 seconds or until thickened.
