Roasted Asparagus

1 lb
asparagus
2 tsps
olive oil
2 tbs
parmesan cheese, grated
1
lemon, cut into wedges


  • Preheat oven to 450 degrees.
  • Arrange asparagus in a single layer in a shallow baking pan.
  • Brush oil over asparagus spears with a pastry brush.
  • Roast 8 to 10 minutes or until tender, but still crisp.
  • Place asparagus spears on serving platter. Sprinkle with cheese. Serve with lemon wedges.

Emily I always used to steam my asparagus, but I like the roasted crispiness and the tiny bit of grilled taste, plus I liked the use of olive oil rather than butter and the extra spritz of lemon. Never thought of that, but it tasted great!
