banana pepper, minced
tomato, chopped
canned artichoke hearts, chopped

red onion, chopped

  • Toast bread and drizzle with dressing.
  • Chop banana pepper, tomato, artichoke hearts, and onion and toss together.
  • Divide all ingredients between sandwiches.

LaniKids didn't like the different flavors. 
ChristineMy husband and I loved these. Made my own dressing by mixing olive oil, balsamic vinegar, salt, pepper, thyme, and oregano. Not the sort of thing I'd expect kids to like but I keep offering a wide variety of foods and sooner or later, they'll come around. *****Simple
